Champagne by any other name...

The organically farmed vineyards & winery of Domaine Alice Beaufort sit in Burgundy, just south the official Champagne appellation of the Aube. Comprised of 75% Pinot Noir & 25% Chardonnay, the wine ferments & then ages for 30 months in used barrels, after which concentrated organic grape must & yeast are added, it is bottled, it undergoes secondary fermentation & ages on the lees for 2 more years. Every bottle is disgorged by hand, has zero dosage & there is minimal sulfur usage throughout.

What a wonderful wine, such a lovely, rich, round style with notes of warm bread, green apple, fennel frond & a hint of oxidation. The wood aging gives it great breadth & warmth on the palate with brioche, lemon zest, a note of forest mushroom & then the dynamic acid backbone comes into play retaining freshness & balance.
