Terrassen is a project by Thomas Pastuszak, wine director for The Nomad Hotels and his wife Jessica Brown, JetBlue Senior Analyst, Onboard Experience-Mint. Made from 30 yr. old vines located on the eastside of Seneca Lake, using 50% whole cluster, the fruit is foot trodden, open top fermented for 2 months, aged for 8 months in 7 yr. old Burgundy barrels & bottled un-fined & unfiltered.

This wine made me sit & pay attention when I tasted it, very much ‘Less Muscle, More Soul’. Light colored, low alcohol (12%), it’s a vibrant Cabernet Franc with a seductive ripe, red fruit nose, that’s all candied cherry & kirsch. It’s got a real snap on the balanced palate from the bracing acid, with tart red currant, rhubarb & under ripe raspberry. Notes of wood spices, bay leaf & a spicy, green pepper note shine through along with a slightly bitter finish. The tannins are medium & provide a pleasant chewy texture that complete this super food friendly wine. Put a slight chill on it & pair with your favorite Prosciutto/Jamon.
