Clemens & Rita are farming using all biodynamic practices & Clemens is considered an expert & leader in biodynamic farming in Germany. The fruit is sourced from 15-30 yr. old vines grown in ‘Vom Grauen Schiefer’ ‘The Gray Slate’ of the Marienburg vineyard, fermented with wild yeasts & aged in 60 yr. old 1000 liter Fuder over 6-9 months & bottled with no fining or filtration & minimal sulfur usage.

Racy yet focused, intense & floral, with a touch of classic rubber on the nose, green apple & lemon/lime aromas. This is a structured, pure & energetic wine with clementine, wild herbs & mineral stone dust all flooding the palate. The tart, laser beam acidity keeps it linear, persistent & the drinker wanting more. PAIR WITH: Asparagus and Cheese Tart or Black Sea Bass Tartare. NOTE: Clemens designates the slate soil types (grey, red & blue) by color co-ordinating the capsules accordingly, love that!
