Located in the small bio-diverse valley of Cialla, sandwiched between the Adriatic & Alps, surrounded by woods of chestnut, oak & wild cherry trees, in the Colli Orientali del Friuli in Eastern Italy, 10 minutes to the Slovenian border you’ll find Ronchi di Cialla - Hills of Cialla. 100% Ribolla Gialla from 25-50 yr. old vines it’s fermented with natural yeasts & spends 2 days macerating on the skins & at least three months in stainless with frequent batonage. A limpid pale straw yellow with hints of green inflections there’s a hint of bread crust, yellow apple, Bosch pear, lemon curd & an appealing florality on the nose. Super fresh on the palate, yellow plum skins, more pear & apple, with a full round texture, framed by bracing acidity & limestone minerality. Showing beautiful balance & finishing with a touch of salinity this is meant to be drunk young as a refreshing aperitif or with some light seafood, sushi or vegetables. #ronchidicialla @soilairselection
